# Steps:
01 - In a medium bowl or large jar, whisk together almond milk, chia seeds, maple syrup, and vanilla extract until thoroughly mixed.
02 - In a small bowl, blend matcha powder, peppermint extract, and green food coloring (if used) with two tablespoons of the chia mixture until smooth.
03 - Stir the matcha-mint mixture back into the main pudding base until fully combined and evenly green.
04 - Cover and refrigerate the mixture for at least four hours or preferably overnight, allowing it to thicken to a pudding-like consistency.
05 - Before serving, stir well, then spoon pudding into bowls or glasses and top with dairy-free yogurt, cacao nibs or chocolate chips, chopped mint, and fresh berries as desired.
