# Steps:

01 - Preheat oven to 400°F.
02 - Slice the top off the head of garlic to expose the cloves. Drizzle with olive oil and wrap in aluminum foil.
03 - Roast for 35 to 40 minutes until cloves are soft and caramelized. Remove from oven and let cool slightly.
04 - Squeeze the roasted garlic cloves from their skins into a mixing bowl. Mash with a fork until smooth.
05 - Add softened cream cheese, sour cream, salt, and pepper to the bowl. Whip with a hand mixer or vigorously by hand until smooth, light, and fluffy.
06 - Fold in chives if desired. Taste and adjust seasoning to preference.
07 - Transfer to a serving bowl. Chill for at least 30 minutes for flavors to meld, or serve immediately.
