01 - Grill or pan-sear chicken breasts over medium-high heat until fully cooked, about 6–8 minutes per side. Allow to rest for 5 minutes before slicing thinly.
02 - Combine hot pepper sauce with sliced chicken in a large bowl and mix gently to coat evenly.
03 - Lay out spinach tortillas; spread each with 2 tablespoons of blue cheese dressing. Arrange one-quarter of the sauced chicken slices down the center of each tortilla.
04 - Fold in sides and roll up tortillas tightly to enclose the filling and serve immediately.
