01 - 2 ripe passionfruits, pulp only
02 - 1 lime, juiced, plus extra wedges for garnish
03 - 8 fresh mint leaves, plus extra for garnish

04 - 3.4 fl oz white rum
05 - 1 fl oz sugar syrup
06 - 3.4 fl oz chilled sparkling water or club soda
→ Ice
07 - Crushed ice or ice cubes as needed
# Steps:
01 - Halve the passionfruits and scoop the pulp into a cocktail shaker.
02 - Add the lime juice, mint leaves, white rum, and sugar syrup to the shaker.
03 - Muddle the mint gently to release its flavor, being careful not to tear it into small pieces.
04 - Add a generous handful of ice and shake vigorously for 15 seconds.
05 - Strain the mixture evenly into two tall glasses filled with fresh ice.
06 - Top each glass with sparkling water or club soda.
07 - Stir gently, garnish with extra mint leaves and a lime wedge, and serve immediately.
