# Ingredient List:

→ Beef & Marinade

01 - 7 oz beef sirloin or flank steak
02 - 1 tbsp olive oil
03 - 1 tsp soy sauce (gluten-free if needed)
04 - Salt and freshly ground black pepper to taste

→ Vegetables & Greens

05 - 1 medium sweet potato, peeled and diced (7 oz)
06 - 1 tbsp olive oil
07 - 1 ripe avocado, sliced
08 - 2 cups mixed salad greens (spinach, arugula, romaine)
09 - 4 cherry tomatoes, halved
10 - 2 radishes, thinly sliced (optional)

→ Eggs

11 - 2 large eggs

→ Dressing

12 - 1 tbsp Greek yogurt
13 - 1 tbsp lemon juice
14 - 1 tsp Dijon mustard
15 - 1 tsp honey
16 - Salt and pepper to taste

# Steps:

01 - Preheat oven to 400°F. Toss diced sweet potato with 1 tbsp olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 20 to 25 minutes until tender and golden.
02 - Rub beef with 1 tbsp olive oil, soy sauce, salt, and pepper. Heat grill pan or skillet over medium-high heat. Sear beef 2 to 3 minutes per side for medium-rare or until desired doneness. Let rest, then slice thinly.
03 - Bring a small saucepan of water to a gentle simmer. Lower eggs in and cook for 7 minutes for jammy yolks or adjust timing as preferred. Cool under cold running water, peel, and halve.
04 - Whisk Greek yogurt, lemon juice, Dijon mustard, honey, salt, and pepper in a small bowl until combined.
05 - Divide mixed greens between two bowls. Arrange roasted sweet potato, avocado slices, cherry tomatoes, radishes, sliced beef, and halved eggs. Drizzle with dressing and serve immediately.

# Helpful Hints:

01 -
  • It's a complete meal in one bowl—protein, greens, healthy fat, and carbs all working together so you actually stay full.
  • Everything comes together in 45 minutes, which means you can make this on a weeknight without the stress.
  • The jammy egg yolk acts like a natural sauce, making every bite feel luxurious even though it's genuinely healthy.
02 -
  • Room temperature beef sears better than cold beef; taking it out 15 minutes before cooking makes the difference between a thin crust and a proper sear.
  • The dressing should taste slightly sharper than you think it will—the warm components and greens mellow it out, so don't undersalt it.
  • Cut your avocado last, just before assembly, or it'll oxidize and turn brown, which ruins the whole visual moment.
03 -
  • Cook your beef to medium-rare, not beyond—overcooked beef becomes chewy, and this bowl deserves better than that.
  • Make your dressing at least 5 minutes before serving so the flavors have time to meld together and taste cohesive rather than sharp.
