01 - 1 large yellow onion, thinly sliced

06 - 4 slices sourdough or country-style bread
07 - 2 tablespoons unsalted butter, softened (for spreading)
08 - 1 medium crisp apple (e.g., Granny Smith or Honeycrisp), thinly sliced
09 - 4 oz sharp cheddar cheese, sliced or shredded
10 - Freshly ground black pepper, to taste

# Steps:

01 - In a skillet set to medium-low heat, melt 1 tablespoon butter together with olive oil. Add sliced onions and salt. Cook while stirring frequently for 15 to 18 minutes until onions turn a rich golden brown and become tender. Optionally, add sugar halfway to enhance sweetness. Remove from heat and set aside.
02 - Arrange bread slices and spread softened butter on one side of each slice. On the other side of two slices, layer half the cheddar cheese, caramelized onions, apple slices, and a sprinkle of black pepper. Top with remaining cheddar slices and cover with the second bread slice, buttered side facing outward.
03 - Heat a nonstick skillet or griddle over medium heat. Place sandwiches in the skillet and cook for approximately 3 to 4 minutes per side, pressing gently, until the bread is golden brown and the cheese has melted. Reduce heat if bread browns too quickly.
04 - Remove from heat and allow sandwiches to cool for 1 to 2 minutes. Slice and serve warm.
