→ Churro Coating

13 - 1/4 cup unsalted butter, melted
14 - 1/2 cup granulated sugar
15 - 1 and 1/2 teaspoons ground cinnamon

# Steps:

01 - Preheat oven to 350°F (175°C) and grease a 24-cup mini muffin tin or line with paper liners.
02 - In a medium bowl, whisk together all-purpose flour, baking powder, baking soda, salt, and ground cinnamon until well combined.
03 - In a large bowl, whisk together melted butter, granulated sugar, light brown sugar, eggs, buttermilk, and vanilla extract until the mixture is smooth.
04 - Add the dry mixture to the wet ingredients and gently mix just until combined. Avoid overmixing to ensure a tender texture.
05 - Spoon approximately 1 tablespoon of batter into each muffin cup. Add 1/2 teaspoon apple butter to the center, then cover with another scant tablespoon of batter.
06 - Place in the oven and bake for 13 to 15 minutes, or until the muffin tops spring back when pressed and a toothpick inserted around the apple butter center comes out clean.
07 - Allow muffin bites to cool in the pan for 5 minutes, then transfer to a wire rack.
08 - While still slightly warm, brush each muffin bite with melted butter and roll in the cinnamon-sugar mixture to coat evenly.
